Food for Thought

A bowl full of chili can make a great comfort meal

Hi my name is Tony and I am the Director of Research and Information at DPC. I have graduated from burning boxed mac and cheese to burning fancier items and I would love to share my joy of cooking with all of you. Each month I will try to give you new recipes that you can add into your renal friendly diet. Since fall is rapidly approaching I thought I would share a recipe for the cooler nights ahead.
3 meat spicy chili
Ingredients:
1 lb. of lean ground turkey
1 lb. of lean ground chicken
½ lb. of ground pork or 3 of your favorite Andouille sausages
1 cup of celery
1 whole onion
1 can of corn (drained)
1 jalapeno (remove the seeds for less spice)
1 green pepper
3 cloves of garlic
¼ cup of chili powder
1 14oz container of low sodium vegetable broth
1 cup of water
2 teaspoons of Italian seasoning
1 teaspoon of black pepper
4 cups of white rice or pasta (optional)

In a large saucepan add all of your meat on medium high heat. Cook the meat until it is browned, but not completely cooked through. Take a minute to carefully drain off any excess fat from the meat. Then add in your garlic, onion, celery, and jalapeno and cook an additional few minutes until your vegetables soften. Next, add in your liquid ingredients and give it all a few stirs. After you have mixed everything up, add in all of the rest of the seasonings and the drained can of corn. Give this a few stirs and turn the heat down to low. Let this cook for an additional hour, but you can continue to let it simmer for another hour on low heat to add more flavor (your choice). If you want to serve this over rice or pasta start cooking the pasta or rice about 10 minutes before you want to eat your chili. Once your chili is done cooking you may want to drain off excess water that came out of the vegetables as they cooked. Remember if your chili is soupy, this counts as water in your diet! Now for the fun step, eat up and I suggest that you keep some of the leftovers in the fridge for a few meals and freeze the rest. Please comment below and let me know what you think.
